Ingredients
- New Potatoes 25 oz
- Coarse Salt to taste
- Blue Cheese 0 oz
- Buttermilk ½ cup
- Red Wine Vinegar 1 teaspoon
- Dijon Mustard 1 teaspoon
- Chopped Green Onions 1½ tablespoons
- Bacon 8 pieces
Step-by-Step Guide
Step 1
In a well-heated skillet, fry the bacon slices until crispy. Transfer to a paper towel and let cool. Then cut into small pieces.
Step 2
In boiling salted water, cook the potatoes until tender, about 12 minutes. Drain and dry well. Slightly cool and cut in half.
Step 3
Meanwhile, in a bowl, mix the crumbled cheese, buttermilk, vinegar, and mustard.
Step 4
Add the potatoes to the dressing and add the green onions and bacon. Toss and serve.
