  • Lemon Zest 1 tablespoon
  • Lemon Juice 1 tablespoon
  • Broccoli 1 head
  • Green Beans 5 oz
  • Dill 0 oz
  • Goat cheese 5 oz
  • Toasted Pine Nuts 2 tablespoons

Step-by-Step Guide

Step 1

Boil the potatoes until tender for 12-15 minutes. Remove with a slotted spoon, drain the water, then place in a bowl with oil, lemon zest, and juice. Let cool.

Step 2

Add the broccoli and green beans to a pot of boiling water. Cook until tender for 4 minutes. Drain, then cool under cold running water.

Step 3

Mix the broccoli and green beans and transfer to the cooled potatoes with dill.

Step 4

Crumble the goat cheese and sprinkle the pine nuts on top.
