Ingredients
- Pitted olives 2 pieces
- Olive Oil ¼ cup
- Meyer Lemon Juice 2 tablespoons
- Freshly squeezed orange juice 2 tablespoons
- Dijon Mustard 1 tablespoon
- Ground Cumin ½ teaspoon
- Salt to taste
- Ground Black Pepper to taste
- Canned Corn 1½ cans
- Mixed tomatoes of different colors 10 oz
- Yellow Beets 10 oz
- Turnips 10 oz
- Pineapple 2 pieces
- Mandarins 6 pieces
Step-by-Step Guide
Step 1
To prepare the yellow salad, blend the dates, oil, lemon juice, mustard, and cumin in a food processor until smooth. Add water and season with salt and pepper.
Step 2
Place a teaspoon of the dressing in a small bowl, and top with sliced yellow vegetables and/or fruits.
Step 3
Season with salt and pepper again, and serve.
