Winter Salad with Pumpkin and Honey
Ingredients
- Pumpkin ½ piece
- Red Onion 2 heads
- Parsnip 4 pieces
- Clear Honey 3 tablespoons
- Young Spinach 10 oz
- White Wine Vinegar 2 tablespoons
- Dijon Mustard 1 teaspoon
- Ciabatta 2 pieces
Step-by-Step Guide
Step 1
Preheat the oven to 220°C. Arrange the vegetables on a large baking sheet, drizzle with half of the oil, and season to taste. Roast for 20 minutes. Drizzle with honey.
Step 2
Crush the sunflower seeds and ciabatta and return to the oven for another 5 minutes or until the ingredients are toasted.
Step 3
Place the spinach in a large bowl and add the roasted vegetables with ciabatta.
Step 4
Mix the vinegar, mustard, and remaining oil, season to taste, and drizzle over the salad.
Step 5
Serve immediately.
