Watermelon Salad with Feta and Mint Sorbet

Ingredients
- Pomegranate juice 10 fl oz
- Sugar 5 oz
- Pomegranate Seeds 1 tablespoon
- Coarse Salt to taste
- Watermelon flesh to taste
- Feta cheese 5 oz
Step-by-Step Guide
Step 1
In a small saucepan, bring the pomegranate juice, sugar, and pomegranate seeds to a boil over medium heat. Reduce the heat and cook, stirring, until the sugar dissolves and the syrup thickens. Strain, pressing out all the juice. Cool to room temperature.
Step 2
On each plate, place 3 slices of peeled watermelon flesh, drizzle with pomegranate syrup, and sprinkle with salt. Top with diced feta cheese.
