Watermelon, arugula, and radish salad
Ingredients
- Watermelon ¼ piece
- Lime 1 piece
- Grated Ginger Root 1 teaspoon
- Olive Oil 1 tablespoon
- Mint Leaves 0 oz
- Chopped Green Onions 2 tablespoons
- Arugula 0 oz
- Radish 1 piece
- Capers 1 tablespoon
- Chopped almonds 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Zest the lime and squeeze out the juice. Cut the watermelon into 6 discs, each 10 cm in diameter and 2.5 cm high.
Step 2
Prepare the dressing by mixing the lime juice and zest with black pepper, ginger, and olive oil. Season the watermelon discs with salt, drizzle half of the prepared dressing over them, and sprinkle with half of the mint and cilantro.
Step 3
Thinly slice the radish and mix it with the remaining mint and cilantro, then add the arugula and peanuts. Drizzle with the remaining dressing and toss.
Step 4
Place a 10 cm diameter cooking ring in the center of a serving plate. Layer a watermelon disc at the bottom, then 1/3 of the arugula and radish mixture, cover with a second watermelon disc, and remove the ring. Use 1 teaspoon of capers to garnish the salad. Prepare two more servings in the same way.
