Step-by-Step Guide
Step 1
Slice the zucchini with a knife, mandoline, or grater into thin, long pieces.
Step 2
Heat the oil in a large skillet, but do not let it smoke; it should be hot but not burning. Add the zucchini to the skillet, stirring or shaking, and wait until the slices slightly darken from the oil and soften.
Step 3
Add finely chopped garlic and onion, sauté for another minute, then mix with lemon juice and chopped parsley. When serving, sprinkle with crumbled goat cheese, season with salt and pepper.
