Ingredients
- Carrot 2 pieces
- Spanish onions ½ piece
- Orange Bell Peppers 1 piece
- Garlic 1 clove
- Canned Baby Beets 1 can
- Olive Oil 1 tablespoon
- Citrus Zest Mix 1 teaspoon
- Meyer Lemon Juice 2 teaspoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a small saucepan, heat the olive oil. Add the onion and carrot, and cook for 5 minutes, stirring constantly, until the onion is browned.
Step 2
Add the bell pepper and garlic, and cook for 3 minutes, until the pepper is soft and crunchy.
Step 3
Add the beans, lemon zest, and a cup of water, along with salt and pepper. Bring to a boil. Reduce the heat and simmer for 10 minutes covered, until the beans absorb most of the liquid. Stir in the lemon juice, and season with salt and pepper.
