- Iceberg Lettuce 0 oz
- Corn Salad 0 oz
- Rice Sweet Wine 0 fl oz
- Thyme 0 oz
- Garlic 0 oz
- Vegetable Oil 0 fl oz
- 33% Cream 0 fl oz
- Ground Black Pepper to taste
- Salt to taste
- Parmesan Cheese 0 oz
- Marinated cherries 2 pieces
- Chives to taste
Step-by-Step Guide
Step 1
Reduce the white wine in a saucepan with thyme sprigs and crushed garlic over medium heat for 5–7 minutes.
Step 2
Add the cream and simmer until thickened. Add salt and pepper to taste.
Step 3
Trim the meat of any membranes. Cut into small pieces (like for steaks). Slightly pound across the grain. Season with salt and pepper.
Step 4
Heat a skillet over high heat and add the vegetable oil.
Step 5
Sear the meat on both sides for 1–2 minutes, adding thyme sprigs and garlic.
Step 6
Finish cooking the meat in the oven at 355°F for 4–5 minutes (the center should remain slightly pink).
Step 7
Tear the lettuce and mix with the sauce.
Step 8
Slice the meat thinly.
Step 9
Grate or slice the cheese thinly with a peeler.
Step 10
Cut the cherry tomatoes into 2–4 pieces depending on their size.
Step 11
Arrange the lettuce leaves in a mound, add the cherry tomatoes, cheese, and meat (slices should remain warm). Garnish with chives.
