Warm salad with shrimp and avocado
Ingredients
- Pistachios ¼ cup
- Avocado 1 piece
- Sweet Red Onion 1 piece
- Courgette 1 piece
- Garlic 1 clove
- Olive Oil 1 tablespoon
- Tiger shrimp in brine 12 pieces
- Orange zest 1 piece
- Dijon Mustard 1 teaspoon
- Ground Black Pepper to taste
- Ocean salt to taste
- Grated Pecorino Pepato Cheese to taste
- Mixed salad greens 3 bunches
Step-by-Step Guide
Step 1
Toast the pine nuts in a dry (!) skillet, watching carefully to prevent burning.
Step 2
Peel the avocado and cucumber, then slice them.
Step 3
Place the greens in a bowl, add the avocado and cucumber, and slice the onion into thin rings.
Step 4
Remove the membranes from the orange segments and cut them into wedges. Squeeze the juice for the dressing.
Step 5
Heat the olive oil in a skillet and add the crushed garlic clove.
Step 6
Add the shrimp and sauté until cooked, a couple of minutes on each side.
Step 7
For the dressing, mix the Dijon mustard into the orange juice and season to taste. Combine the greens with the dressing, reserving some for the shrimp.
Step 8
On a plate, arrange the dressed greens and orange pieces. Top with the shrimp and sprinkle with grated Parmesan.
