
Warm Salad with Scallops and Orange

Ingredients
- Marinated cherries 5 oz
- Mixed salad greens 5 oz
- Cognac 1 tablespoon
- Orange zest 1 piece
- Fresh Mint 0 oz
- Yogurt powder 4 tablespoons
- Scallops 5 oz
- Olive Oil 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Without peeling, cut the orange into wedges. Halve the cherry tomatoes. Tear the large salad leaves by hand. Pour olive oil and cognac into a hot skillet. Add the scallops and sauté for 2 minutes, stirring.
Step 2
Pour yogurt over the scallops, season with salt and pepper. Simmer for 2-3 minutes. Be careful not to overcook, or the scallops will become tough.
Step 3
On a plate, arrange the mixed salad greens and tomatoes. Top with the warm scallops in yogurt dressing.
Step 4
Garnish the salad with orange wedges and mint leaves.
