Ingredients
- Turnips 5 oz
- Vegetable Oil 0 fl oz
- Honey 0 oz
- Ground Cumin ½ teaspoon
- Couscous 3 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Mint 1 bunch
- Feta cheese 5 oz
- Meyer Lemon Juice 1 teaspoon
- Grated Ginger Root ½ teaspoon
Step-by-Step Guide
Step 1
Cut the carrots into medium slices, add vegetable oil, a little honey, and cumin. Roast the carrots at 355°F for about 20 minutes.
Step 2
Meanwhile, pour boiling water over the couscous and let it sit for 10 minutes.
Step 3
Cool the roasted carrots, then add the steamed couscous, grated ginger, lemon juice, and finely chopped mint.
Step 4
Dress the salad with vegetable oil, mix well, and sprinkle with feta cheese.
