Warm salad with red rice, zucchini, and pine nuts
Ingredients
- Black rice (imperial) 5 oz
- Sun-Dried Tomatoes 6 pieces
- Pistachios 0 oz
- Lemon 1 piece
- Capers 1 tablespoon
- Courgette 1 piece
- French salad dressing 2 tablespoons
- Chopped Sage Leaves 0 oz
Step-by-Step Guide
Step 1
Cook the rice in boiling water until done. Drain and cool.
Step 2
Heat a pan over high heat. Add the chopped tomatoes and 1 tablespoon of their oil. Then add the pine nuts, grated lemon zest, and capers. Sauté, stirring, for 1-2 minutes.
Step 3
Add the grated zucchini and sauté for another minute. Add the rice and cook for another 1-2 minutes to heat it through.
Step 4
Add the French dressing and parsley. Mix and serve.
