Warm salad with red cabbage and zucchini
Ingredients
- Sweet Potato 1 piece
- Butter 1 tablespoon
- Brown Sugar 0.1 teaspoons
- Olive Oil 4 tablespoons
- Chopped Parsley 0 oz
- Raisins 15 oz
- Lemon Juice 2 teaspoons
- Toasted Pine Nuts 2 tablespoons
- Red Wine Vinegar 1 teaspoon
- Red Cabbage 1 piece
- Garlic 2 cloves
Step-by-Step Guide
Step 1
Combine the sweet potato, butter, brown sugar, and ½ cup of water in a small saucepan, season with salt and pepper if desired, and bring to a boil.
Step 2
Cook for 10 minutes or until the sweet potato is tender and most of the water has evaporated.
Step 3
Add 2 tablespoons of olive oil, parsley, raisins, pine nuts, lemon juice, vinegar, and cook for another 3-4 minutes or more until all the liquid has evaporated.
Step 4
Heat the remaining olive oil in a large skillet over high heat.
Step 5
Add the cabbage and garlic, season with salt and pepper if desired. Cook for 5 minutes, stirring frequently.
Step 6
Remove the garlic. Transfer the cabbage to a serving bowl and top with the sweet potato mixture.
