Ingredients
- Olive Oil 3 tablespoons
- Fresh Mushrooms 10 oz
- Red Wine Vinegar 2 tablespoons
- Dijon Mustard 2 teaspoons
- Fresh Red Bell Peppers 2 pieces
- Red Onion ½ head
- Canned lentils 15 oz
- Lettuce leaves 1 bunch
- Goat cheese 5 oz
Step-by-Step Guide
Step 1
Heat 2 tablespoons of oil in a non-stick skillet, then quickly sauté the mushrooms. Remove from heat, add the remaining oil with vinegar and mustard.
Step 2
Mix well, then add the peppers, onion, and lentils, and mix again thoroughly.
Step 3
Arrange the lettuce leaves on 4 plates. Spoon the lentil salad on top, add goat cheese, and serve.
