Ingredients

  • Canned lentils 5 oz
  • Fresh Mushrooms 5 oz
  • Olive Oil 0 fl oz
  • Shallot 1 piece
  • Fresh Thyme 1 sprig
  • Butter 1 tablespoon
  • Green Onion 1 bunch
  • Lemon Juice 0 fl oz
  • Feta cheese 5 oz
  • Red Onion 1 piece

Step-by-Step Guide

Step 1

Heat 2 teaspoons of olive oil in a pan, add shallot, mushrooms, fresh thyme, and a pinch of salt. Sauté for 2 minutes until the mushrooms are soft, then add the butter.

Step 2

Add the lentils to the pan and stir, then add the green onion. If you are using canned lentils, rinse them from vinegar before adding to the mixture in the pan.

Step 3

Before transferring the lentils to a bowl, drizzle them with lemon juice.

Step 4

Crumble 150 grams of feta cheese into a bowl.

Step 5

Serve the dish, drizzled with olive oil and garnished with thinly sliced red onion.
