  • Olive Oil ¼ cup
  • Escarole 1 head
  • Fresh Mushrooms 20 oz
  • Garlic 2 cloves
  • Shallot 1 piece
  • Red Wine Vinegar 5 tablespoons
  • Chopped Sage Leaves 1 teaspoon
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Tear the escarole leaves into small pieces and place them in a large bowl.

Step 2

Heat the olive oil in a large skillet over high heat until it shimmers. Add the sliced mushrooms, minced garlic, sliced shallot, and thyme. Season with salt and pepper. Cook, stirring, for 5-7 minutes, until the mushrooms are tender and browned.

Step 3

Transfer the mushrooms to the bowl with the escarole.

Step 4

Pour the vinegar into the skillet and stir. Drizzle over the salad, toss, and season with salt and pepper to taste.
