- Jerusalem Artichoke 0 lbs
- Bacon 5 pieces
- Spanish onions 1 head
- Eel 1 head
- Radicchio Salad 1 bunch
- Parsley 1 bunch
- Olive Oil to taste
- Balsamic Vinegar 4 spoons
- Parmesan Cheese to taste
Step-by-Step Guide
Step 1
Peel the Jerusalem artichokes and boil them in salted water for fifteen minutes until tender. Let them cool and then cut into small cubes.
Step 2
Cut the bacon into 1.5 cm cubes and fry in a large skillet until a golden crust forms, then add the sunchoke to the skillet. Add thinly sliced red onion and sauté everything together for three to four minutes, stirring occasionally.
Step 3
Transfer the sautéed Jerusalem artichokes with onions and bacon to a large bowl, season with salt and pepper to taste. Add balsamic vinegar and olive oil. Thinly slice the lettuce and radicchio with a sharp knife and add them to the bowl. Mix well.
Step 4
Arrange the salad on plates and garnish each serving with thin shavings of Parmesan.
