Step-by-Step Guide
Step 1
Peel the pumpkin and beetroot, and cut them into cubes.
Step 2
Place on a baking sheet, drizzle with olive oil, and sprinkle with spices.
Step 3
Bake in the oven at 390°F for about 20–25 minutes or until desired tenderness.
Step 4
In a bowl, combine the arugula, roasted vegetables, add goat cheese, walnuts, and sprinkle with sunflower seeds.
