Ingredients
- Olive Oil 9 tablespoons
- Pickled Chanterelles 20 oz
- Garlic 4 cloves
- Shallot 5 oz
- Lemon 1 piece
- Chopped Sage Leaves 2 teaspoons
- Green Tagliatelle Pasta 20 oz
- Salt to taste
- Ground Black Pepper to taste
- Champagne Vinegar 3 tablespoons
- Chopped Sage Leaves 0 oz
- Feta cheese 5 oz
- Chives 0 oz
Step-by-Step Guide
Step 1
Clean the mushrooms and cut them into small pieces.
Step 2
Heat the olive oil in a pan and sauté the finely chopped shallots and garlic until soft. Increase the heat and add the mushrooms, thyme, and grated lemon zest. Cook until the mushrooms are tender and most of the liquid has evaporated.
Step 3
Meanwhile, boil the pasta in salted water until al dente. Drain and dry well.
Step 4
Add vinegar to the mushrooms, then season with salt and pepper. Gently fold in the hot pasta, feta, parsley, and chopped chives. Serve immediately or chill.
