Warm quinoa salad with spinach and feta
Ingredients
- Olive Oil 1 tablespoon
- Onion 1 head
- Garlic 2 cloves
- Fresh basil leaves 1 bunch
- Quinoa 1 cup
- Chopped Sage Leaves ¼ cup
- Chicken Broth 2 cups
- Chopped Green Onions ¼ cup
- Salt to taste
- Ground Black Pepper to taste
- Lemon 1 piece
- Feta cheese ¼ cup
Step-by-Step Guide
Step 1
Heat the olive oil in a deep skillet over medium heat and sauté the finely chopped onion until soft, about 5-7 minutes. Add the minced garlic and sauté for another minute until fragrant.
Step 2
Add the chopped spinach and cook for a while until soft.
Step 3
Add the quinoa, broth, parsley, dill, and season with salt and pepper to taste. Bring to a boil, cover, reduce heat, and simmer for about 20 minutes until the quinoa is tender.
Step 4
Remove from heat and add a little lemon juice and crumbled feta.
