Warm potato salad with olives, feta, and mint
Ingredients
- New Potatoes 30 oz
- Fresh Mint 1 bunch
- Pitted olives ¾ cup
- Olive Oil ¼ cup
- Feta cheese 10 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the potatoes into quarters and place them in a pot of salted water. Add 3 tablespoons of mint, bring to a boil, reduce heat, and cook until tender, about 15 minutes. Drain and transfer to a large bowl.
Step 2
Reserve 2 tablespoons of chopped mint, 2 tablespoons of cheese, and 2 tablespoons of chopped olives. Add the rest to the warm potatoes. Add olive oil, season with salt and pepper. Top with the reserved mint, cheese, and olives and serve immediately.
