Warm Potato Salad with Green Beans and Carrots

Ingredients
- New Potatoes 25 oz
- Coarse Salt to taste
- Ground Black Pepper to taste
- Mayonnaise 0 oz
- Chinese green beans 5 oz
- Champagne Vinegar 3 teaspoons
- Green onion tops 1 piece
- Carrot 1 piece
Step-by-Step Guide
Step 1
In a pot of boiling salted water, cook the potatoes until tender. Use a slotted spoon to transfer them to a bowl, leaving the water in the pot. Cut the slightly cooled potatoes into small pieces.
Step 2
Add the chopped green beans to the boiling water from the potatoes and cook for 2–3 minutes. Drain and add to the potatoes.
Step 3
Add mayonnaise, vinegar, finely chopped green onion, and grated carrot. Mix, season with salt and pepper.
