- Fresh Mushrooms 10 oz
- Shimeji mushrooms 5 oz
- Spanish onions 1 head
- Sun-Dried Tomatoes 5 oz
- Mixed salad greens 5 oz
- Goat cheese 5 oz
- Balsamic Vinegar 2 tablespoons
Step-by-Step Guide
Step 1
In a skillet, melt the butter. Add thinly sliced mushrooms and finely chopped onion. Sauté for 5-10 minutes until the mushrooms are lightly browned.
Step 2
Add the finely chopped tomatoes, vinegar, and 1 tablespoon of oil from the tomatoes. Bring to a boil, reduce the heat, and simmer for another 5-6 minutes.
Step 3
Arrange the salad greens on plates, top with mushrooms, and sprinkle with crumbled cheese. Serve immediately.
