Ingredients
- Arugula 5 oz
- Butter 1 tablespoon
- Shallot 5 pieces
- Minced garlic 1 tablespoon
- Fresh Mushrooms 3 cups
- Coarse Salt 1 teaspoon
- Ground Black Pepper 1 teaspoon
- Champagne Vinegar 2 tablespoons
- Mascarpone Cheese Unagrande 2 tablespoons
- Chopped Sage Leaves 2 tablespoons
Step-by-Step Guide
Step 1
Place the arugula in a large serving bowl.
Step 2
In a large skillet over high heat, melt the butter. Add the garlic and finely chopped shallots and cook for 1-2 minutes.
Step 3
Add the thinly sliced mushrooms and sauté for 3-4 minutes until they begin to caramelize. Season with salt and pepper, then add the vinegar.
Step 4
Remove from heat and add the mascarpone. Stir until creamy. Add the parsley and let it cool to room temperature.
Step 5
Top the arugula with the mushrooms and serve.
