Ingredients

  • Lentils 10 oz
  • Walnuts 0 oz
  • Goat cheese 5 oz
  • Olive Oil 1 tablespoon
  • Spanish onions 1 piece
  • Garlic 2 cloves
  • Bay leaf 1 piece
  • Thyme 1 teaspoon
  • Arugula 0 oz
  • Salt 1 teaspoon
  • English Dry Mustard 1 teaspoon
  • Walnuts 2 tablespoons
  • Ground Black Pepper to taste
  • Balsamic Vinegar 2 tablespoons

Step-by-Step Guide

Step 1

In a medium-sized skillet, sauté the walnuts in olive oil for 1 minute. Transfer to a plate and let cool.

Step 2

In the remaining oil, add the onion and garlic and sauté over low heat for 5-7 minutes.

Step 3

Stir in the lentils, bay leaf, and thyme. Pour in boiling water (275 ml) and cook on the lowest heat with the lid on for 30-40 minutes.

Step 4

In a mortar, mash the garlic with salt until it becomes a paste.

Step 5

Add the mustard powder, balsamic vinegar, and vegetable oil. Whisk together and season with freshly ground black pepper.

Step 6

Season the cooked lentils with salt, transfer to a warmed serving dish, and pour over the dressing.

Step 7

Add crumbled goat cheese and lightly torn arugula leaves.

Step 8

Before serving, sprinkle with walnuts. Serve warm.
