Warm Grilled Potato Salad

Ingredients

  • New Potatoes 0 lbs
  • Olive Oil 5 fl oz
  • Italian chopped parsley 1 teaspoon
  • Lemon ½ piece
  • Salt to taste
  • Ground Black Pepper to taste
  • White Balsamic Cream 0 fl oz
  • Chopped Sage Leaves 5 fl oz
  • Capers 3 tablespoons
  • Pitted olives 10 pieces

Step-by-Step Guide

Step 1

Boil the potatoes in boiling water, unpeeled, until almost cooked.

Step 2

Preheat the grill or barbecue.

Step 3

Cut the potatoes in half and thread onto skewers.

Step 4

In a bowl, mix 75 ml of olive oil, the herb mix, the zest and juice of half a lemon, a little salt, and pepper. Brush the mixture onto the potatoes and place them on the grill. Grill until cooked through and golden brown.

Step 5

Transfer the potatoes to a bowl.

Step 6

In a small bowl, mix the remaining olive oil, vinegar, parsley, chopped capers, and finely chopped olives. Drizzle over the salad and gently mix. Transfer to a serving dish and serve.
