
Warm Grilled Eggplant Salad with Cherry Tomatoes and Herbs

Description
The eggplants should not be too large, approximately 10-12 cm in length.
Ingredients
- Eggplants 6 pieces
- Olive Oil 0 fl oz
- Garlic 2 cloves
- Marinated cherries 10 oz
- Scallions 2 pieces
- Capers 2 tablespoons
- Chopped Sage Leaves 3 tablespoons
- Salt to taste
- Balsamic Vinegar 2 tablespoons
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the grill or barbecue.
Step 2
Slice the eggplants into small rounds and brush with olive oil. Place on the grill and cook for 2 minutes on each side until tender and golden brown. Transfer to a plate.
Step 3
Top with halved cherry tomatoes and sprinkle with finely chopped green onions, parsley, finely chopped capers, and minced garlic.
Step 4
Mix the remaining olive oil with balsamic vinegar and drizzle on top. Season with salt and pepper and gently toss. Serve immediately.
