Warm German Potato Salad with Spinach
Ingredients
- Young Red Potatoes 10 oz
- Green Beans 5 oz
- Olive Oil 3 tablespoons
- Leeks 3 stalks
- Balsamic Vinegar 2 tablespoons
- Chopped Parsley 2 tablespoons
- Fresh Tarragon 0 oz
- Fresh Spinach Leaves 4 cups
Step-by-Step Guide
Step 1
Boil the potatoes in salted water for 8 minutes until tender.
Step 2
One minute before the cooking time is up, add the green beans.
Step 3
Meanwhile, heat the oil in a medium skillet. Add the leeks. Sauté

for 3-4 minutes until soft. Remove from heat and mix with the vinegar.
