Warm Beet Salad
Ingredients
- Yellow Beets 2 pieces
- Tomatoes 2 pieces
- Sweet Red Onion ½ piece
- Courgette 1 piece
- Arugula 1 bunch
- Olive Oil 0 fl oz
- Honey 1 teaspoon
- Roasted Peanuts 0 oz
- Balsamic Vinegar 0 fl oz
Step-by-Step Guide
Step 1
Wash the beets, wrap them in foil, and place them in a preheated oven at 390°F for 1.5 to 2 hours.
Step 2
In a heated pan with olive oil, add sliced onion, chopped tomatoes, and zucchini (peel and remove the seeds from the zucchini beforehand). After 5 minutes of frying, add balsamic vinegar and a spoonful of honey to the pan and sauté for another 10 minutes.
Step 3
Toast the cashews in a dry pan for 5 minutes.
Step 4
Chop the beets and arugula, mix them with the sautéed vegetables, and sprinkle with chopped nuts.
