  • Butter ½ teaspoon
  • Apple 1 piece
  • Lemon ½ piece
  • Mixed spices for Christmas pudding a pinch
  • Eel ¼ bunch
  • Olive Oil 1 teaspoon
  • Salt a pinch
  • Ground Black Pepper to taste
  • Mandarin Puree 1 teaspoon
  • Pitted Wild Apricots 2 pieces
  • Peeled chestnuts 3 pieces

Step-by-Step Guide

Step 1

Peel the apple (a large and firm one works best) and cut it into medium-sized sticks. In a small saucepan, melt the butter and add the apples. Sauté over medium heat, adding the lemon juice from the half lemon and the Christmas spices, for 10 minutes.

Step 2

Tear the lettuce leaves by hand into a deep plate.

Step 3

Prepare the dressing — squeeze the juice from the other half of the lemon into a small cup (yogurt cups work best if you're making a serving for one), dissolve the salt, add the olive oil, and whisk with a spoon until smooth. Add the apricot puree and season with pepper to taste.

Step 4

Drizzle the dressing over the lettuce leaves and gently toss. Then add the warm apple slices and mix even more carefully (to maintain aesthetics).

Step 5

Cut the prunes into pieces and break the walnuts slightly by hand. Sprinkle over the salad.
