Vitamin Salad with Pecorino

Description
Under this name in Soviet cuisine, there was a whole range of salads, the key principle of which was the use of highly regarded dietary products of that time: cabbage, apples, carrots, celery, and others. The vitamin salad can easily take on a completely different flavor dimension by adding a bit of hard cheese, such as pecorino.
Ingredients
- White Cabbage 20 oz
- Carrot 10 oz
- Celery stalk 2 pieces
- Antonovka apples 2 pieces
- Grated Pecorino Pepato Cheese 5 oz
- Pistachios 0 oz
- Sugar 1 tablespoon
- Apple Cider Vinegar 0 fl oz
- Olive Oil 0 fl oz
- Dill 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Shred the cabbage into thin strips. Do the same with the celery, carrots, and apples (the apples can be sliced thinly or cut however you prefer). Sprinkle salt over the cabbage and massage it with your hands to release its juices; this will soften it. Finely chop the dill.
Step 2
Combine vinegar with sugar, olive oil, a pinch of salt, and pepper.
Step 3
Dress the vegetables with the sauce, sprinkle with dill, and let sit for ten minutes. Serve topped with pine nuts and cheese, either grated on the largest grater or simply broken by hand into chunks.
