Vinaigrette with Herring

Description
In this vinaigrette, instead of herring, you can use salted sprat, sardines, anchovies, or mackerel, cleaned of heads and entrails. If desired, the fish can be soaked in cold water for 1 hour.
Ingredients
- Herring 5 oz
- Potato 10 oz
- Beetroot 5 oz
- Carrot 0 oz
- Cucumbers 5 oz
- Mayonnaise 5 oz
- Chicken Egg 1 piece
Step-by-Step Guide
Step 1
Soak the salted herring in milk for 6 hours.
Step 2
Soak lightly salted herring in cold water for 30–40 minutes, then remove the skin and bones.
Step 3
Boil the beetroots, carrots, and potatoes in their skins, then peel and slice them.
Step 4
Slice the peeled salted or pickled cucumbers in the same way.
Step 5
Dress the vegetables with mayonnaise or vegetable oil, sugar, vinegar, and salt, gently mix, place in a salad bowl, and garnish with neatly sliced pieces of herring, egg wedges, and lettuce leaves.
