Ingredients

  • Yellow Beets 5 pieces
  • Salad Potatoes 5 pieces
  • Pickles 5 pieces
  • Turnips 2 pieces
  • Scallions 1 bunch
  • Spanish onions ½ head
  • 9% Vinegar 1 tablespoon
  • Vegetable Oil 0 fl oz
  • Dijon Mustard 1 teaspoon
  • Ground Black Pepper 1 teaspoon

Step-by-Step Guide

Step 1

Boil the beets, potatoes, and carrots in their skins.

Step 2

Let the vegetables cool slightly, then peel them.

Step 3

Finely chop the boiled vegetables and pickles.

Step 4

Chop the onion finely as well.

Step 5

In a separate bowl, mix the vinegar and vegetable oil. Add the teaspoon of Dijon mustard. Add the ground black pepper. Mix everything thoroughly.

Step 6

Combine all the chopped vegetables. Dress with the sauce.

Step 7

For garnish, sprinkle with green onions.

Step 8

Before serving, let the vinaigrette sit in the refrigerator for a couple of hours.
