Ingredients
- Red Canned Beans 15 oz
- Capers 3 spoons
- Onion ½ heads
- Cucumbers 5 oz
- Parsley 0 oz
- Oregano ½ spoons
- Red Wine Vinegar 0 fl oz
- Olive Oil 0 fl oz
- Dijon Mustard 1 tablespoon
- Maple syrup 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Finely chop the onion.
Step 2
Pour cold water over the onions and let them sit for 5 minutes, then drain the water. This step helps to remove some of the 'raw' aroma of the onions so that it doesn't overpower the salad.
Step 3
In a large bowl, combine vinegar, olive oil, mustard, salt, and pepper. If the dressing tastes too sharp, add 1–2 teaspoons of honey or maple syrup to balance the vinegar.

Slice the cucumbers into half-moons and chop the parsley finely.

Add the beans, dried onion, cucumber, parsley, capers, and dried oregano to the bowl with the dressing.

Mix well, cover, and chill in the refrigerator for at least 1 hour to allow the beans to marinate in the dressing. The salad can be stored in an airtight container in the refrigerator for up to 4 days.
