Description

This salad can be described as 'country-style' — it looks so juicy and vibrant. However, cucumbers are available all year round, and canned red beans are too, so you can create a countryside mood in just two minutes: add chopped herbs, capers, and onions to the mix, and prepare a dressing made of Dijon mustard, vinegar, olive oil, and maple syrup. An exquisite finishing touch and a subtle detail that transforms a set of ingredients into a memorable dish.

Ingredients

  • Red Canned Beans 15 oz
  • Capers 3 spoons
  • Onion ½ heads
  • Cucumbers 5 oz
  • Parsley 0 oz
  • Oregano ½ spoons
  • Red Wine Vinegar 0 fl oz
  • Olive Oil 0 fl oz
  • Dijon Mustard 1 tablespoon
  • Maple syrup 1 tablespoon
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1 Image

Step 1

Finely chop the onion.

Step 2 Image

Step 2

Pour cold water over the onions and let them sit for 5 minutes, then drain the water. This step helps to remove some of the 'raw' aroma of the onions so that it doesn't overpower the salad.

Step 3 Image

Step 3

In a large bowl, combine vinegar, olive oil, mustard, salt, and pepper. If the dressing tastes too sharp, add 1–2 teaspoons of honey or maple syrup to balance the vinegar.

Step 4 Image

Step 4

Slice the cucumbers into half-moons and chop the parsley finely.

Step 5 Image

Step 5

Add the beans, dried onion, cucumber, parsley, capers, and dried oregano to the bowl with the dressing.

Step 6

Mix well, cover, and chill in the refrigerator for at least 1 hour to allow the beans to marinate in the dressing. The salad can be stored in an airtight container in the refrigerator for up to 4 days.
