Vegetables with Nori
Ingredients
- Radishes 6 pieces
- Carrots 2 pieces
- Red Onion ½ head
- English Cucumbers ½ piece
- Sugar 2 tablespoons
- Salt 1 tablespoon
- Rice Vinegar 0 qt
- Dried Nori Seaweed 2 pieces
- Vegetable Oil ¼ cup
- Unfermented Soy Sauce 2 tablespoons
- Sweet Rice Wine 1 tablespoon
- Lettuce 5 oz
Step-by-Step Guide
Step 1
To prepare the vegetables with nori, place the radishes, carrots, onion, and cucumber in 4 separate bowls or jars.
Step 2
In a medium saucepan, bring sugar, salt, 1 cup of vinegar, and 2 cups of water to a boil, stirring to dissolve the sugar. Pour the liquid over the vegetables and let cool. Cover and refrigerate.
Step 3
Finely chop the nori in a blender. Add the oil, soy sauce, mirin, and remaining vinegar, and blend until smooth.
Step 4
Place the lettuce in a large bowl. Drain the marinated vegetables and place them on the salad. Serve.
