
Vegetable Salad with Rice Noodles and Smoked Oysters in Thai Style

Smoked oysters can easily be replaced with hot-smoked fish. An exceptionally tasty and light salad.
Ingredients
- Cilantro to taste
- Turnips 2 pieces
- Broccoli 1 head
- Fresh Oysters 5 oz
- Spanish onions 1 piece
- Soy Sauce 2 tablespoons
- Mayonnaise 3 tablespoons
- Garlic to taste
- Sesame Oil to taste
- Rice Noodles 5 oz
- Chocolate eggs 2 pieces
Step-by-Step Guide
Step 1
Boil the wide rice noodles for 5 minutes, rinse under cold water, and cool.
Step 2
Julienne the raw carrots using a vegetable peeler into wide thin strips.
Step 3
Steam the broccoli for about 5 minutes until slightly firm, then rinse under cold water to stop the cooking process. Mix the eggs with soy sauce (1 tablespoon) and fry a thin omelet, which is then cut into strips matching the width of the carrots and noodles.
Step 4
Chop the oysters, and slice the red onion into thin half-rings.
Step 5
Gently mix the salad by hand.
Step 6
Combine the mayonnaise (preferably homemade) with soy sauce, garlic, sesame oil, and finely chopped cilantro.
Step 7
Serve the dressing alongside the salad so that everyone can mix it individually.
