Vegetable salad with pistachio dressing.
Ingredients
- Lemon ½ pieces
- Unsalted peanuts, shelled 5 oz
- Sunflower Seeds 1 tablespoon
- Soy Sauce ½ spoons
- Dijon Mustard 1 tablespoon
- Garlic 2 cloves
- Dates 2 pieces
- Salad mix "Eats" 5 oz
- Marinated cherries 12 pieces
- Carrot 1 piece
- Spanish onions ½ pieces
- Cucumbers 10 oz
Step-by-Step Guide
Step 1
In a blender, add pistachios (preferably fresh, unsalted pistachios), sunflower seeds, garlic, Dijon mustard, soy sauce, the juice of half a lemon, dates, and 150 ml of water.
Step 2
Blend everything at high speed until you achieve a smooth sauce.
Step 3
Cut the cherry tomatoes in half and mix them with the salad greens, grated coarsely grated carrots, thinly sliced red onion, crushed garlic, and cucumber cut into thin strips.
Step 4
Drizzle the salad with dressing and serve.
