Ingredients
- Oranges 1 piece
- Olive Oil 2 tablespoons
- White Cabbage ½ head
- Carrot 1 piece
- Antonovka apples 1 piece
- Walnuts to taste
- Herbs 1 bunch
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
First, prepare the dressing: mix the juice of one large orange with 1-2 tablespoons of olive oil.
Step 2
Finely shred fresh white cabbage (½ small head or a third of a large one), lightly salt it, and vigorously knead it with your hands. If the cabbage is young, knead it gently; if it's mature with thick veins, knead it more forcefully.
Step 3
Grate one fresh carrot on a coarse grater.
Step 4
Cut a large apple, preferably of the Antonovka variety, into pieces with the skin on.
Step 5
Lightly toast a handful of walnuts in a hot skillet and crush them.
Step 6
Mix all the ingredients, season with salt and pepper to taste, and dress with the orange dressing. Let the salad sit for an hour. If using young cabbage, let it sit for 30 minutes.
Step 7
Serve in individual salad bowls, garnished with a sprig of herbs.
