Vegetable Salad with Eggplant
Ingredients
- Eggplants ½ piece
- Courgette 1 piece
- Cress salad ½ bunch
- Cilantro ½ bunch
- Parsley ½ bunch
- Olive Oil 4 tablespoons
- Sour Cream 2 tablespoons
- Dijon Mustard 1 teaspoon
- Marinated cherries 4 pieces
- Toasted Sesame 1 teaspoon
- Ocean salt to taste
Step-by-Step Guide
Step 1
Cut the eggplant into small cubes.
Step 2
Place in a heated skillet with mustard oil.
Step 3
Salt and stir. Sauté over high heat for 6–7 minutes, stirring occasionally.
Step 4
Then transfer to a plate.
Step 5
Peel the cucumber and cut it into small pieces. Salt it.
Step 6
In a deep bowl, mix the mustard and sour cream.
Step 7
Combine the eggplant with the resulting sauce.
Step 8
Add the cucumber.
Step 9
Finely chop the herbs.
Step 10
Add them to the salad and sprinkle with sesame seeds. Mix well.
Step 11
Cut the tomatoes into 3–4 pieces.
Step 12
Add them to the salad and serve.
