Ingredients
- Spelt 5 oz
- Arugula 0 oz
- Apple 1 piece
- Red Currant 5 oz
- Dates 0 oz
- Dijon Mustard 1 teaspoon
- Apple Cider Vinegar 0 fl oz
- Honey 1 teaspoon
- Olive Oil 0 fl oz
- Walnuts 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.

Rinse the spelt and then cook according to the instructions. Allow the cooked spelt to cool to room temperature.

Rinse and dry the arugula.
Step 4
Slice the apple thinly, removing the core.
Step 5
Shred the red cabbage into thin strips.
Step 6
Remove the pits from the dates and chop them into small pieces.
Step 7
Toast the walnuts in a dry skillet, then chop them roughly.

For the dressing, mix the mustard, vinegar, olive oil, and honey until smooth. Season with salt and pepper.
