Description

In principle, instead of veal, you can use lean pork. Frisée lettuce can also be replaced with any other salad, as long as it is juicy and crunchy.

  • Veal 0 oz
  • Couscous 2 tablespoons
  • Pistachios 0 oz
  • Olive Oil 2 tablespoons
  • Honey 1 teaspoon

Step-by-Step Guide

Step 1

It is advisable to prepare the veal in advance. You can simply roast it in the oven and cut off as much as needed for the salad from the whole piece. The remainder can be used for other purposes.

Step 2

Place the couscous in a small container, pour boiling water over it, cover with a lid, and let it sit for 4 minutes. You can add a little olive oil for fluffiness.

Step 3

Meanwhile, cut the frisée lettuce into strips about 5 mm wide and place it in a salad bowl. Add the veal, sliced thinly, and the pine nuts. Season with salt.

Step 4

Mix the olive oil with honey, pour the dressing into the salad bowl, and mix well.

Step 5

You can serve it in the same salad bowl, but for a more impressive presentation, it's better to mound it on a separate plate.
