Turkish Eggplant and Hot Pepper Salad
Ingredients
- Eggplants 2 pieces
- Lemon 1 piece
- Mild Chili Spice 1 piece
- Olive Oil 6 tablespoons
- Sugar 1 tablespoon
- Salt to taste
Step-by-Step Guide
Step 1
Wash and peel the eggplants, cutting the skin into long strips. Fry the strips over high heat in olive oil.
Step 2
Cut the flesh of the eggplants into pieces and blanch. Then dry and blend in a blender with the hot red pepper, olive oil, and lemon. Season the resulting puree with salt and add sugar.
Step 3
Spread the puree over the previously fried strips.
