Turkey Club Sandwich
Ingredients
- Pancetta 6 slices
- White bread 6 slices
- Eel 0 oz
- Potato 1 piece
- Chives 2 tablespoons
- Turkey 5 oz
- Chopped Sage Leaves 1 teaspoon
- Egg white 2 pieces
- Champagne Vinegar 1 tablespoon
- Garlic 1 clove
- Dijon Mustard 1 tablespoon
- Olive Oil 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the grill. Place the pancetta on the grill and cook for 3–4 minutes until crispy, flipping once. Transfer to a paper towel to drain.
Step 2
To make the dressing, in a suitable container, combine the egg yolks, vinegar, mustard, finely chopped garlic, and seasonings to taste, and mix well. Gradually add olive oil while stirring. After a minute, you will notice the mixture starting to thicken. Begin adding the oil more vigorously while constantly stirring, but not too quickly, as the mixture may curdle.
Step 3
Toast the bread under the grill and spread the prepared dressing on it. Divide the lettuce between two slices of bread, add the sliced tomato and some finely chopped chives. Season to taste.
Step 4
Top with slices of cooked turkey, then cover with the remaining slices of bread, spread side up. Add the lettuce, followed by the crispy pancetta, and sprinkle with chives. Cover with the remaining slices of bread and gently press down. Cut each sandwich into four triangles and secure with a toothpick to hold them together. Arrange on serving plates and sprinkle with chopped parsley.
