Tuna Salad with Green Beans, Cherry Tomatoes, and Mustard Dressing
Ingredients
- Chinese green beans 10 pieces
- Spanish onions 1 head
- White Beans 10 oz
- White Beans 10 oz
- Marinated cherries 15 pieces
- Arugula 1 bunch
- Canned tuna in its own juice 10 oz
- Dijon Mustard 1 tablespoon
- Honey ½ tablespoon
- Lemon ½ piece
- Olive Oil 4 tablespoons
Step-by-Step Guide
Step 1
Cut the green beans into small pieces and boil in salted water for 2-3 minutes until tender. Drain, rinse under cold water, and transfer to a bowl.
Step 2
Finely chop the red onion, place it in a sieve, and rinse under cold water. Add it to the bowl with the green beans.
Step 3
Add the cannellini beans, red kidney beans, halved cherry tomatoes, arugula, and slightly flaked tuna. Toss gently.
Step 4
For the dressing, mix the mustard, honey, lemon juice, and grated lemon zest in a small bowl. While whisking, slowly add the olive oil. Drizzle over the salad, toss gently, and serve.
