Ingredients
- White Beans 10 oz
- Olive Oil 6 teaspoons
- Red Wine Vinegar 2 spoons
- Garlic 2 cloves
- Parsley 4 stalks
- Canned tuna in its own juice 10 oz
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Soak the beans overnight in clean water. Drain and pat dry. Transfer to a pot and add enough water to cover them by about 3 cm. Bring to a boil, then reduce the heat to low and simmer for forty-five to fifty minutes until tender.
Step 2
Drain the beans in a colander, reserving ¼ cup of the cooking water. In a bowl, combine the oil, vinegar, and minced garlic. Add the beans along with the reserved broth, then season with salt and pepper.
Step 3
Transfer to a salad bowl, sprinkle with chopped parsley, and top with slices of tuna.
