
Tuna and Avocado Sandwich

Description
Leftover avocado puree makes a great dip for corn chips.
Ingredients
- Avocado 1 piece
- Canned cod liver 1 can
- White bread 6 slices
- Potato 1 piece
- Ocean salt a pinch
- Iceberg Lettuce 6 leaves
- Ground Black Pepper a pinch
- Parsley 6 sprigs
- Meyer Lemon Juice 1 tablespoon
- Sweet Red Onion 1 head
Step-by-Step Guide
Step 1
Toast the bread in a toaster. Cut each slice in half diagonally.
Step 2
Peel the avocado, remove the pit, and mash or blend it until smooth.
Step 3
Finely chop the parsley and add it to the avocado along with salt, pepper, and lemon juice, mixing well.
Step 4
On one half of each toast, place lettuce, tomato slices, onion rings, and avocado puree. Lightly flake the tuna with a fork and place it on top. Cover with the other half of the toast.
