- Tomatoes 5 oz
- Fresh basil leaves 0 oz
- Olive Oil 0 fl oz
- Cottage cheese 0 oz
- Sour Cream 0 oz
- Milk 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Arugula 0 oz
- Orange zest 0 oz
- Chips to taste
Step-by-Step Guide
Step 1
For the pesto, blend the arugula with half of the olive oil, and season with salt and pepper to taste.
Step 2
Cut the tomatoes into large pieces, drizzle with the remaining olive oil and spices, add the finely sliced basil, and mix.
Step 3
Blend the cottage cheese, sour cream, and milk until smooth, with a consistency similar to liquid sour cream, and transfer to a siphon.
Step 4
Pour the pesto in the center of the plate, top with the tomato salad, and finish with the creamy mousse from the siphon.
Step 5
Garnish with thin bread chips and sifted orange zest.
