If possible, it’s best to use colorful small tomatoes the size of plums for this salad.
Ingredients
- Tomatoes 0 lbs
- Donut Peaches 6 pieces
- Ghee 0 oz
- Suluguni Cheese 10 oz
- Spanish onions ½ heads
- Lemon 1 piece
- Balsamic Vinegar 1 tablespoon
- Honey 1 tablespoon
- Olive Oil 5 fl oz
- Cilantro 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the peaches in half, remove the pits, and place them in an oven preheated to 355°F for fifteen minutes.
Step 2
Cut the tomatoes in half, finely chop the red onion, and roughly chop the cilantro.
Step 3
In a bowl, whisk together the balsamic vinegar and honey. Gradually whisk in the lemon juice, followed by the olive oil, adding it in a thin stream. Season the sauce with salt and pepper, and mix in the finely chopped onion.
Step 4
In a non-stick skillet, heat the clarified butter and sauté the cheese cut into large cubes.
Step 5
Mix the tomatoes with cheese, peaches, chopped cilantro, and dressing. Serve as a salad or as a side dish with rabbit.
