- Spanish onions 1 head
- Red Wine Vinegar 3 tablespoons
- Tomatoes 6 pieces
- English cucumber 1 piece
- Olive Oil 3 tablespoons
- Fresh basil leaves ¼ cup
- Coarse Salt to taste
- Ground Black Pepper to taste

Step 1
Slice the onion into thin half-rings — you should have about 1 cup, and transfer it to a bowl. Pour in the vinegar, mix, cover with plastic wrap, and let sit for 30 minutes.
Step 2
Meanwhile, cut the tomatoes into small wedges and transfer them to a bowl. Add the cucumber, cut into small pieces. Then add the onion, drizzle with olive oil, and sprinkle with chopped basil. Season with salt and pepper. Mix well.
